For a delicious alternative milk you ONLY need nuts, seeds, or oats + water. This is how i’ve made my alternative milks for almost a decade. This recipe is for if you want the basics and add some autumn flare to mix things up!
Step 1: Gather Your Ingredients
Must Have:
- Oats, Nuts, or Seeds (your choice, pick on or mix them for a milk blend!)
- Filtered water
- Blender, food processor, or alternative milk maker (I don’t use the almond cow but I have heard amazing things!)
Optional:
- Vanilla
- Cinnamon
- Pumpkin Spice
- Dates
- Maple or Agave Syrup
- Salt
I get all of these ingredients from my local Trader Joes!
Step 2: Measure your ratio
3oz (½ cup) of nuts + 32oz (4 cups) = ¼ gallon of alternative milk
The nut milk is creamy and drinkable, able to be used in coffee, tea, or any recipe that can call for alternative milk! This is my preferred ratio, but lessen the water for increased creamy/gritty-ness or increase water to skim out the milk. It will take a few times to discover your desire ratio.
Multiply the above ratio for your desired amount of nut milk! Reminder, shelf life is around 4-7 days refrigerated. Choose a ratio depending on your alternative milk needs.
Step 3: Soak your nuts or seeds! (preferably 12-24hrs)
*Oats DO NOT have to be previously soaked, making this perfect for a spontaneous batch of oat milk!*
Step 4: Strain and wash, be sure to rid any film as separation is natural
Step 5: Blend ingredients and add desired amount of water
This includes any sweeteners or additives you prefer!
Step 6: Strain using cheesecloth or bag
Be careful not to allow an even drip, when it comes to nuts or seeds you can squeeze generously. Pro tip for oat milk, don’t over squeeze the bag and let it drip more naturally and slowly.
Step 7: Refrigerate in an airtight container, enjoy! 🙂
Enjoy your milk for up to 3-7 days! I try to use mine in its prime of the first 3-4 days. Be sure to shake well before opening as separation is natural. Let me know in the comments how your experience was!
